Illustrator 10 Color Picker Color Changes.

Whenever I select certian colors - mainly from the right side satuarated colors from the Color Picker - the color I selected does not appear in the color box. Rather a similar less saturated color.
 
Is the document color mode (File > Document Color Mode) set to CMYK? It could be that you are picking colors that cannot be displayed in this mode.

When you pick such a color, a yellow warning symbol will appear in the color picker indicating that this color is "out of gamut". Just underneath, there is a small swatch showing the nearest cmyk color.

The problem won't happen if you change the document color mode to RGB, but if you intend to send your document to print, it's better to be warned about these colors before you use them, than to get a nasty suprise after you spend lots of money! Many RGB colors look very vibrant on screen, but they print very badly, which is why Illustrator tries to give you a more accurate representation of what to expect.
