IIS6 to IIS7

Huy guys, I have'nt posted on here for a while but thought someone here may be able to help me. We currently have a dedicated server with a hosting company which is getting old. It runs windows 2003 and IIS6. Our site is currently running on this server fine. We have recently started moving to another company and am currently configuring a Windows 2008 server with IIS7. Unfortunatly I am not too hot on this subject anyway but using IIS7 has confused me more.

In 2003 as far as i knew you use DNS and iis6 to put you sites live then change the name servers for your domains to point to that server. With our new server I dont have DNS installed or the option to add it in the roles admin in Server manager. Is it all now done through IIS7??? Also does anybody have any good tutorials or something that can explain running multiple sites on the same IP with IIS7???

Sorry about all the info but i wanted to give a clear picture of what i was trying to do.
