IIS 6.0: SMTP logging

We currently have an IIS (6.0) SMTP server with logging setup but the logging doesn’t gather enough info. When looking at the data in the IIS logs the cs-uri-query column seems to capture the opening line(s) of each email sent but that isn't really enough.

Is there anyway the IIS logging can be altered so that the full header, body, etc. is captured in these logs?
