Ok, I called Adobe and they said I could create a fillable PDF in ID, but I can't seem to figure it out. I am using the tryout version and my company is in the process of purchasing the license. Seems silly but, I created a letterhead for one of our divisions and they would like to be able type in word right onto the doc. instead of emailing me the copy. Any ideas?
Thanks in advance!

Are there two questions here?

Re the letterhead. You can approach this in two ways: the more common is to create letterhead paper (in ID or AI) and get several 100/1000 offset printed. When the person writing the letter is ready to print, make sure they choose the printer tray containing the letterhead. It's the only way to get true PMS colours if this is what has been used in the company logo.

If they insist they want to print the letterhead each time they print a letter, then your best bet is to create the elements of the LH design in AI. You may choose to create all of them separately (e.g. logo, contact details, etc) and insert each of them into a Word template, or group the lot before the next step. I have found the best format is PNG - small files, controllable resolution (150-200dpi is fine for desktop printers) and transparent backgrounds, as well easy acceptance by Word. Insert the graphics into a header/footer (which can be any size required to fit), using tables without borders to control placement. Set margins so as not to allow typing over these elements, and save as a Word template. The writer then just needs to open a copy of the template and save it with a new filename.
