I have 3 sites on one domain with Exchange servers. The genius before me put an
Exchange server(5.5) at one location with 5 users. At this point they're doing
DRAS with the server here. I'm wanting to remove the server from that location
completely and put them on POP3. I will also will need to be sure all their mail
is saved to their woskstations as well as the GAL. I am thinking that if I do a
one-time sync to their systems I'll be in good shape once I remove their Exchange
server and put in the router. They'll be able to send through their own SMTP
host.

Is this the best and most simple way to do this or would anyone have any good
ideas to share?

 
If I understand you, are going to sync the offline folders to the workstations and then put then on pop3. It has been a while since I worked with exchange but if you are using outlook as the client won't you want to set up personal folders for pop3. Do this before removing the server and then modify delivery so that all the mail can be moved to the .pst file. Modify the client's host servers and you should be done.

Like I said I haven't worked with exchange server in well over a year!!!
