Hyper V

Is there any reason to purchase Microsoft Server 2008 without HyperV? I'm just wondering why they offer an edition without HyperV. I currently have no need for Hyper V but was going to purchase the version with it, just so I could have the option later.

I beleive it's just there as an option to avoid anti-trust issues.

Baddos is correct. The only difference is whether or not it includes Hyper-V and a token price difference.
