I've installed Hyper-V Server 2008 on our new Dell Server. How do I go about creating VM's? I see quite a bit of documentation for Servers running Server 2008 with Hyper-V Enabled, but not for the Hyper Visor only scenario.

You read the documentation - yes, it's out there. This is an intelligent work forum (it even says that in the upper left). You're expected to do research before asking about a specific problem.

Plan for performance, and capacity takes care of itself. Plan for capacity, and suffer poor performance.

Under Administrative Tools there is a program called Hyper-V Manager. You can create and manage VMs from there. In the event that you're running a Server Core install instead of a full GUI install then you'll have to configure the server to allow remote management, then install the Hyper-V Manager on another computer (downloadable from Microsoft) connect to your Hyper-V server remotely.

I just re-read this. If you're using the "stand-alone" hypervisor (or even the Server Core install) you'll have to install the Hyper-V Manager client on another workstation and connect to the Hyper-V server remotely.
