How to track file & folder deletion

I need to track who is deleting files & folders on our servers. How can I enable this auditing? They are standard domain servers.

Check out "undelete"...


Not exactly cheap but tracks deletions by user, restores deleted files, also by version, up to the minute unlike system restore. Have it on all my major servers, sure beats going to tape to restore files.

I dont seem to find the setting where to enable file/folder deletion in Local Security Settings. Also how I select certain folders for auditing?
