According to the info in the image above, at the bottom. I should set an entry in the store with the following command:

bcdedit/set/{bootmgr}path\EFI\ubuntu\shimx64.efi

but the admin command prompt tells me "An unknown command was specified"

What could be the problem?

Never mind!
I was missing some spaces, and I had an extra "/" too:

bcdedit /set {bootmgr} path \EFI\ubuntu\shimx64.efi

It's working now!
