I've published application to users... so I don't have to share the desktop. But userfind ways to by pass that by using explorer capability built-in all office product.
They click on open-file and browse right through the save/save as window.

You should utilize Group Policy along with the published application. Not sure exactly what you want to prevent, but if, for example, you don't want users to see the C drive in Explorer, you can lock that down in a group policy. For example, we have a Lockdown Policy that doesn't allow uers to right-click, or see certain drives if they do manage to explore. The also can't see anything in the Control Panel except Mail Settings. Do a search on Desktop Lockdown Group Policy and I'm sure you'll find hundreds of settings you can set.
