How to non-destructively dodge an object?

Can anyone please tell me how I can non-destructively dodge an object, that is "undo" my dodging later such as in masking?

...the most non-destructive method is to fill a layer with 50% grey, change the layer mode to soft light...

...then paint in black to burn, turn the opacity down on the brush...

...paint in white to dodge...

...to undo areas, paint back in with a 50% grey brush at 100% brush opacity...

Stupid question....but as I am doing it, how do you fill a layer with 50% grey? Are there certain RGB, or CMYK numbers?

...edit > fill > choose 50% grey to fill the layer...

...this is also RGB - R 128 + G 128 + B 128...

...or just put 50 in the B channel of the color picker (underneath H and S, top left)...

...same for cmyk...

...sorry, when i say same for cmyk, i mean edit > fill 50% grey...

...this usually means 50% across all channels in CMYK...
