How to migrate from Exchange to Outlook at the desktop level?

We are giving up on our Exchange server in a very small environment. Can anyone help us with how to migrate the mailboxes, address books, calendar, etc to Outlook at the desktop level?? Thanks in advance.

Create a personal folder for each user, and manually move all the items from the Exchange mailbox to the PST folder.
