How to manage schedule where dates keep on changed

I have 500 tasks in my project schedule. Some tasks are starting late and not what I have mentioned in the Start Date. I usually change the Start date to reflect the actual start date of the task but the problem is that then I do not know when was the original date of start was.

I keep multiple versions of my project and if I have to refer, I check the older versions to see what was the original start date was.(which is not the best way). I tried to add "Actual Start and Actual Finish" columns but when I enter the date when the task is started in Actual Start date, it changes the Start Date also. How can I compare the variance between dates
 
You should have saved a Baseline before you started. A baseline plan is a copy of the information as you thought it would be. This is the data that is used to calculate variance.
