As a starting point visit the tldp.org there are some good how-to's on installing and configuring MTA

I recommend qmail, since its secure and stable mail transfer agant. There is a free documentation "life with Qmail" written by Dave Sill...it gives brief description how to setup email server. There is more detail step by step book "The qmail handbook" also written by Dave Sill.

Since you are running rh8.0 I'd run postfix. It's more secure than sendmail and easier to work with than qmail. You can use
to auto switch between sendmail and postfix. You can find a number of howtos here:
