I currently run Windows XP Pro on my main hard drive, and I want to install Linux Xubunto 10.10 on my second hard drive. I read that this can be done, but my question is, how do I setup the dual boot? Will the Linux installer automatically update the MBR on the main drive after it finishes installing on the second? Any tips or help will be most appreciated!

Yes, Linux will automatically adjust the MBR. It will install a utility call GRUB (Grand Unified Boot Loader), that will give you a menu to which system you want to boot.

You will want to install Linux AFTER you install Windows because Windows will replace the MBR to attempt to remove any Linux installations. Done this way, Linux and Windows will co-habitate very nicely.

Great! That's what I thought. Thank you for the reply! :)
