The above suggestion will keep the name and number out of the online directory, but won't stop the information from being displayed to a caller.
To "hide" the calling extension, give the station a unique COS with the Client Room field set to "Y". This will display the Room Number information instead of the extension.
Names are always displayed. If you don't want anyone to know who's calling them (why?), give the caller a bridged appearance to a station that you've set up with the name as "*" or some other information.
