How do clients communicate with a NAS device? I assume you plug the NAS into a switch and then what? Do you configure a server to attach to it to handle the client requests?

Depends on the NAS appliance you use. Normally the NAS appliance is the server as well. You give it an IP address and configure the device for disk and off you go.

Yes, you configure a NAS to handle different types of client connections. Depending on the NAS Server, you will get different features. I would first determine what goals you have for getting a NAS. Is it to run applications on, or just be a file server? What type of clients are connecting to the server like *nix, windows, mac, etc... Then compare different NAS solutions that meet your needs.
