B:

There are several ways to do this, my favorite being:

1. Type your text; In the color picker, set fill to none, stroke should already be none;

2. Go to the appearance palette, and from the flyout select "Add New Fill";

3. Apply a gradient.

I don't know why it can't be done straight, but that's Illustrator for ya!

thanks for prompt response

after step 2
foreground is black
playing with Gradient Tool (G) gives Black to gray to white options only

1. i need the gradient to be COLOR
2. gradient to go like Brown to Yellow - to Brown (back), symmetrical

is (1) and (2) possible?

B:

Pick a different gradient, or change the colors on the default black to white gradient by clicking on the little sliders (or anywhere on the gradient bar in the gradient palette to add sliders) and change the colors. Perhaps reference the Help files for more in-depth explanations of gradients.

Make sure your swatches palette is set to show all the default gradient swatches. You can also pick a swatch palette from the swatch library list with other gradients in it (Window>Swatch Libraries).
