I am trying to change the General Delivery and System Manager default mailbox numbers. Currently they are defaulting to mailbox 100 and mailbox 102. The problem is; I have extensions that also use 100 and 102 and I want to creat mailboxes for thoes extension as 100 and 102.

From what I can see the General Delivery and System Admistraton mailboxes are automatically assigned on installation. Depending on the amount of digits in the number range they will end up at 100 and 102 in your case. The docs state that you cannot delete a General Delivery or System Administration mailbox.
You could try to change the Operator default extension number by Operations/Operator Settings and in the attendant box type the operators new extension number (try a spare number) then click submit. I have not tried and cannot test so beware.
