Hi,
For changing the timezone ,edit the file /etc/TIMEZONE and change the entry in it from Eastern to Central.Then reboot the system.During reboot it reads the file /etc/TIMEZONE and will configure it to CST.
I hope this helps....

# cat /etc/TIMEZONE
# @(#)init.dfl 1.5 99/05/26
#
# This file is /etc/default/init
# This file looks like a shell s
# compatibility with old version
# (i.e., export commands) are al
#
# Lines of this file should be o
# TZ, LANG, CMASK, or any of the
#
TZ=US/Central
CMASK=022
LC_COLLATE=en_US.ISO8859-1
LC_CTYPE=en_US.ISO8859-1
LC_MESSAGES=C
LC_MONETARY=en_US.ISO8859-1
LC_NUMERIC=en_US.ISO8859-1
LC_TIME=en_US.ISO8859-1
