Let's say for example that someone needs to put 8 hours of work. This work needs to be done anytime from Monday to Friday. The guy can put 2 hours on day, 2 hours next day and so on. Or he/she can put 8 hours on any of these days between Monday and Friday.

The only constraint is that the work can only start after Monday and needs to end before the end of day on Friday. But it doesn't mean that it will take 5 days. Only 8 hours.

How can I enter this task on MS Project?

Select the task.
Enter the Duration.
Set task Type to "Fixed Duration"
Enter the amount of Work

Another option is to schedule the task with the most likely duration and set a deadline of Friday on the task. If you give the resource the week, he'll take it.
