How map a key for "Undo"

Hello,

We recently upgraded from Extra! Extreme to Reflection. We have been enjoying the new interface with the ribbon, however no one has figured out how to map a key to "undo" an action - in most other applications, this is done by pressing "ctrl-z".

Is this even possible?
