How does a person customize a roaming profile?

Trying to customize what folders get copied back to the server vs the MS defaulted folders. For example, allowing the Favorites folder but not the History one.
 
Forgot to mention it's a NT domain serving Win2k clients. Planning a switch over to Win2k in the future but the network is a very mixed bag of OS's and it will take a lot of planning before implementing.
 
What I meant was set up policies on the server using System Policy Editor for the users concerned. Under Windows NT User Profiles there's an 'Exclude directories in roaming profile' box, which if checked allows you to enter directories you wish excluded. This works for 2k & xp workstations as well as NT ones (you need to save the policies as ntconfig.pol in the netlogon share folder - C:\WINNT\system32\Repl\Import\Scripts normally - if there's not one there currently, or update current one). For win9x/ME workstations on the domain you need to use their own policy editors, and save config.pol in the same folder.
