How do you edit a PDF document??

I have a pdf document created by an ex employee. It does not allow editing or highlighting/copying text. I need to be able to copy all the text into a text editor (it is 200 pages long).

Obviously it's encrypted somehow - is there a way of getting round this??

It may not include any text. PDFs can contain text and fonts, but also images. The text might just be an image of text.

What software do you have? Can you open the PDF with Illustrator, for example?

Do you try to save it as a word file (using Save As). If that doesn't work well, do you have OmniPage? It does a great job of OCRing pdf files.
