How do I use a specific color in Illustrator

I'm trying to use a color in one of my designs I'm normally a photoshop user but am trying to also work in Illustrator, how do I find the color without the Custom Color Button?
 
Use a combonation of your color pallette and your swatches pallette. I like them both visible so I can mix my color in the color slider then drag it to the swatches pallette where I double-click on it and give it a name and make it a spot color. Just so you know, in photoshop it's forground/backround color and in illustrator its fill/stroke color. Your shapes can have a fill, a stroke, or both.

HINT: you can shift-click on the oil-slick in the color pallette to change the color scheme. BEHOLD! As Steve Jobs introduces us the latest in desk-lamp technology!
 
If you are talking about Pantone or other standard color names illustrator does not have the handy feature photoshop does. I just use PS to find the color and type its CMYK value into my new color in AI. If you want you can also goto your illustrator program directory and look for a folder names Swatch Libraries. These are just regular .ai files with the swatches pre-filled with standard colors. BEHOLD! As Steve Jobs introduces us the latest in desk-lamp technology!
