How do I set the system time?

The mail server's time stamp is off. I assume that it uses the system time, but I can not remember how to set that.

I have 'rdate' installed, and do an 'rdate -s time.nist.gov' once a day via cronjob. The mailserver howto I read suggested this as a way to keep the timestamp stuff from getting out of skew.
