Most email programs, even the freebies have options to add to address books. If theres not a button, maybe right click on the email address. Sometimes the program may fill in other information from the email such as the persons name, sometimes they don't. If not given the option at the time you save to address book, you can probably return later and fill in other information. In that way you'd have a contact.
As far as replying, usually there is a reply function in the program (like a button to click on) or if not, again right click and usually you'll be able to reply. The reply email will fill in the email address to and your address. It will also fill in the subject with a 'RE:' in front of it. It may or may not include the original message, depending on how it's set up.
