How do I find e-mail that has been deleted.

You're probably using Outlook I'm assuming...
But in the event you're not and are using Netscape or Mozilla mail, all e-mails are kept on the harddrive until you manually compact the folders. Just go into your profile directory and under the directory for mail there are several files named Inbox, Sent, Trash, etc. and all the history is in those files.
