How do I create greyscale type in Adobe IndesigN

I am a newcomer to Indesign and am trying to format a children's picture book to my printer's exacting requirements. I have placed CYMK colour illustrations in my book block. The colour management settings must be set to off. Over some of the illustrations I have either black or white text and I am required to make this greyscale. How is this achieved>
 
Hi

Do you mean that you are importing the text from another program such as Photoshop, as art?

If you are just creating the text in Indesign and it is black or a tint of black you should not have to do anything.

If you are importing the text as art, from Photoshop, open the file in Photoshop, select "Image", "Mode" and set it to "Grayscale"

If the type is white (reverse type) select it and select "Paper" as the color in the Swash panel.

No grayscale involved since it is not really a color at all.
