I assume you are talking about the selections on an automated attendant prompt - for example, an incoming caller would press 1 to be transferred to extension 12. If that is what you are referring to, the changes are made under selector code assignments for the automated attendant. This is done in via the system administrator's mailbox, and depends on what voice mail you are using. Once you know what voice mail you have, you can get good directions from the Avaya support website.
If you don't know what voice mail you have, an easy way to check is to call your system and enter *7 when the greeting begins to play.
