I have to find (for a lawyer)how can he does to know the date (and the time, if it is possible) that he read a specific e-mail. He can see the date he received it, but he should know the date he read it.
I don't believe there is a field that stores "when read".
Something that may help in the future is....
While composing a letter you can:
View
Options
check the box for "Request delivery receipt" and/or
Check the box for "Request read receipt"
and that will let you know when the mail you sent was delivered and read.
The following dates are also available to view:
Defer until
Due by
Expires
Modified
Sent
Sorry I can't be of much help but there are a lot of "smart" people in this forem that may.
This is more the function of a contacts management program. I know of some places where a database has been specifically written to record every contact with a client - phone, in person, email, letter, with dates, times, comments etc. It can get very involved. There are some ready-made apps - Act! or Maximizer I think allow you to record those sorts of fields. And no doubt there are heaps of other programs around more suitable for a legal practice.

In Outlook I know how you can do this in a way but it is complicated. You can do this using the Journal in Outlook. However you have to have the person listed as a contact before you open the e-mail and set up the Journal options to track e-mail for that contact.
Once this is all done you open the e-mail and a Journal entry is made. Now the Journal Entry posts for the time the message was sent and not read. However you open the journal entry and then click on FILE - PROPERETIES and it will show the time the Journal Entry was made which would be the time the message was marked as read. TADA... ;-)
As mentioned in another post there is probably some other program that is better at tracking this kind of information than Outlook.
