How can i edit text and check box in acrobat 7.0 pro??

i have an appraisal report i need to do some editing on but i sometimes when i use the touch up text tool in the tool menu, i delete and add some text it seems to move the rest of the text a little and it look like it over laps each other. Also i have little boxes on the report with a X in them, i want to know how to check and uncheck the X in the boxes.
