how 2 limit computer use to 1 application?

I want to allow customers in a retail shop access to our web pages and an inventory database. I need to restrict their usage to just our web pages (its not a free cyber cafe!) and prevent them opening any other program or closing what is open. Then I need an escape to return the computer to regular usage for employees

Any thoughts much appreciated, or any known tutorials around- I don't mind reading up but I'm not sure of the best way to start.
