A bit of a strange request Ill admit, but is it possible to have some sort equavalant MX record for a hosts file entry?

Id like to route outbound mail to a specific domain from our exchange server to an internal mail server. Our exchange server will be the only mail server sending to that domain.

Not sure of what version of Exchange you are using? But, you should be able to set up and "New" SMTP connector (in Exchange) dedicated to route specific traffic to a specific domain.
