Hosting more than one Domain on 1 server

I am currently hosting two web sites, x.com and y.com. I would like to know how/if it is possible to host e-mail for these two separate domains using one my one static IP address. And information is appreciated.

Yes it is possible to accept email for user@x.com and user@y.com on a single instance of Exchange. You have to configure the IMS routing to provide mail services to both domains. You need DNS MX records that point any mail traffic to x.com and y.com to the same place.
 
You can add as many domain as you want via the IMC, as SND points out its just a matter of setting a MX record for the domain to point to the IP for the server in question. We run 3 domain names off our 5.5 server.
