host headers in SPS

I am having a little trouble understanding host headers in the context of setting up Sharepoint 2007. In the following article,
which talks about setting up Sharepoint 2007. There is a section which goes like,

You could now click the "OK" button but you'll end up with a warning telling you that it's not recommended to host the MySite on the same web application as the Sharepoint Services Provider administration site. So I recommend creating another web application for the MySites.
I did this in my case using a new hostheader "
I looked up some MS sites,
from which I understand that you need host headers to host multiple sites. But I host multiple sites anyways from my IIS 6 and I assign different IP/Port combo to them. But as the following link says,
"host headers allows you to assign multiple Web sites the same IP Address/Port and distinguish them from each other with host headers"

I now know how to create host headers. But you cant create these host headers from IIS. So could anyone explain, in the context of the SPS 2007 and the first link posted above, how exactly do I create this host header.
