What is everyone doing with respect to a holiday menu? Is the best way to setup a test condition and have a basic holiday menu which you change the recording before each holiday?

Yes. Its easiest way and you can pre-schedule as many dates as you like.

In v4.1 there is going to be a new condition type feature on incoming call routes. You will be able to select a calendar like you can in a condition on VM Pro.
