Hide user's last name from recipeints

I need to configure some of our employee's account such that their last names are not visible to SMTP recipients.

These are folks who often send e-mail to customers and management wants to avoid problems with stalkers, etc.

I know I can edit their SMTP addresses, but can I configure things so that the employee shows up with first and last name in the global address list, but the name attached to an outgoing e-mail only shows first name and last initial?

You can do this in the recipient policy. Set the default as FirstL, additional as FirstLast then run the recipient update service to propogate it.
