In Windows XP, I have files and folders unhidden. But I'd like to hide just certain folders, not all that area marked hidden. Is there a way to selectively hide folders?

Right click on the Folder and select Properties, look for the "Hidden" check box at the bottom of the page.

This of course only works if the radio button in the Tools->Folder Options->View dialog is set to Not Show hidden files. Otherwise they'll be visible no matter what you do.

Thanks "vacunita" for the correction.

You can always Encrypt or use the Access Controls to block access.

If you want to keep other users from seeing your files, you're better off using separate user profiles and keeping your files within your user profile.
