No if you are using AD then you will need to hide it there. All you do with 6.1 is a lookup from cucm and using the AD credentials. Call manager has no rights to right, delete, add or hide anything in AD.
That is why i said if you are using LDAP natively.
The thing is if you are using AD, even if you hide it in call manager the user can be found in outlook or any other app using AD as a directory lookup.
You can hide the use in separate OU that is not accessible by any of those apps and create an app in ccm for that specific user which are hidden from corporate directory by design. However at that point all the login for that user will be local to ccm.
