Why is the Hibernate option (of the remote computer) grayed out when using remote desktop connection? Is there a way to make this available?

I think it is a "by design" feature that many of the power options are not available (as per normal) on the remote machine. You can shutdown and probably hibernate by using third party applications or Windows own commands from a Command Prompt or the remote's Start Run box.

See this thread for some examples.

When connected to a remote computer you can also use, "Ctrl+Alt+End" to bring up a shut down/restart menu for the PC you are remoted into.
