Help needed with Illustrator 1

How can I add an unamed color to the swatches in Illustrator and then change it globally. I have files that have been supplied as pdf’s, in which everything has been created using the color registration instead of black. In Freehand it’s easy, just choose to name all colors and the color used appears in the pallette, this can then be adjusted and it affects everything in the document. In Illustrator I can select an element of the file and add the color to the pallette but changing the values doesn’t affect everything in the file.
I’m sure it must be something simple, much like myself!
 
Munnings:

Select one of the registration black objects, then Select>Same Fill Color, then change the fill to whatever you want. You may run into issues if there are multiple fills applied anywhere, but hopefully that's not the case.

To create a swatch, just select an object and from the swatches palette click the New icon or flyout and Add New Swatch, then choose your settings in the dialog.
