HDD - understanding what I've got!

Current configuration

3 x 18.2GB SCSI Ultra 3

Disk Management says
Dynamic Disk 0 = 33.91GB (? 3x18= 54 ?)
C is simple volume of approx 8GB
D is simple volume of about 25GB - very quickly running out of space!
there is a partition of 36MB
Where is the rest of the HDD space?
How can I tell if this is a RAID / mirror set up?

Have a redundant server with 3 x 36.4GB Ultra 320 SCSI drives in, can I just take one of these out and put it into the other server ??

 
It's RAID5. You lose a third of the disk space in a RAID5 setup.

Without determining how it is set up, I wouldn't. I reckon it's set up the same way so you will have a degraded RAID5 array if you pull the disk. If the redundant server loses a second disk you lose everything.

Buy more disk or clear up what you have. Disk is pretty cheap these days. I just bought 2x250GB SATA150 disks for 180 inc. taxes.
 
From the available disk space it appears that you have a RAID 5 set-up.

Assuming that you have a spare disk slot and your disks are hot-pluggable then you can add the 36Gb disk to your server. This will give you and extra 36Gb disk space but RAID 0 ie. no fault-tolerance.
