Having Problems With Latency 3

We have Exchange Server 2003 which we recently migrated to from Exchange 2000. Ever Since We decomissioned Exchange 2000 we started getting latency problems. Workstation running Office 2003 would lock up and bringing up a NEW MAIL window would take minutes. Has anyone ever had this issue before?

We have a Dual Xeon Processor Server on A Gigabit LAN.
 
You mean disk latency or Outlook being slow to respond? Disk patency would mean you need to provide number of users, disk speeds and config for all volumes.

How many GCs?
 
What's the event logs say?

Did you go through the MS process of removing the previous Exchange server?

To answer the first question the latency is happening when the Outlook Client tries to retrieve a users mailbox, or when the user is trying to create a new message.I have to GC's and over 200 mailboxes.

The Old exchange was removed from the System management and the New server was promoted to Master. But the old Exhcnage 2000 wasnt uninstalled.The services are not running though.
