Having a directory on a different server

I don't think it can be done that way. You can however, point to that vhosts dir anywhere on your network using just one server.
 
You could create a virtual server on the second apache server
This server would have to have it's own ip address and the DNS records would have to be set accordingly.
 
Did you look into mod_rewrite? I have found it useful on my server to redirect requests for mail.somehost.com to (less typing for the user, easier for them to understand sometimes, the say "well, I thought my mail server is mail.somehost.com..."
