hardware upgrade on Windows 2000 domain 1

Hi All

I would really appreciate tips, gotcha and advice for upgrading (Hardware)our domain controller. Current setup
3 domain controllers. Server1 = primary DC as well as file/print server, server 2 = Exchange server(exch. 2000) and server3 = development server. I would like to maintain all files and folders permission when migrated to new server and any tips on exchange migration to another box will be appreciated. the new setup would still be the same.

for exchange... add a new server, install exch on it and join it to the exch site (with 2000, is this still the case??)
then you can just move your mailboxes over and change the outlook setings for the clients.

file/folder permission?
either robocopy, or NTbackup/restore with preserving security info
