My point is that you have provided no information on which to answer. Nothing on mailbox sizes, clients connecting, HA and DR requirements, virtualization vs. physical, separate vs combined roles, retention policies, compliance requirements, backup needs, mobility, messaging hygiene, etc. There is a plethora of information needed before a plan can be developed.
If you want a supported, best practices solution, using the sizing information provided by the product group is a must.

If your users are each sending and receiving 500 emails a day and you have to have 100% uptime, journaling, litigation and so on, that's different to shoe string budget and management refusing you a SAN due to only 5 people using email and the rest need periodic access.
