A non-dos partition would either be hpfs or ntfs (linux or winnt, 2000 or xp) and is created when any of those systems are installed (hdd partitioned and formatted as such)..
Common non-dos partitions include the linux ext2, ext3 and resierfs. There are also many others. You create one by a partitioning program, where it is converted to a different signature. For example, when installing Linux, you will be prompted to make your partitions. These partitions will the be formatted into a linux format and the files will be installed.
