I am trying to get guest mailboxes using unused mailboxes in a Partner Voice Messaging PC Card R3.0 sixteen mailboxes (Large). I am using an ACS R6.0.0 standalone processor. Is their such a thing as guest mailboxes as in the Partner Voice Mail VS series?

no such thing mailboxes are regular mailboxes without any funky features and they are all the same

So in order to have sixteen mailboxes, I must have sixteen extension ports?

OK now I get what you meant with guest mailbox (I call it phantom mailbox but it is the same thing) , no you don't need 16 ports just assign the extension you want to use in #310 to cover to VM
