We use Lotus Notes Domino as our mail server, but we also have an SMTP box within the DMZ. The SMTP box does scanning of all mail and attachments for worms, virus', and blocks spam and disallowed attachments (pics, exes, etc.)

Since we perform thorough mail scanning in the DMZ, do I need to use GroupSheild on my Domino server or can I just use the VSE 7 client like I have on all my other servers?

Carpe diem, procrastination is the thief of time...

You'd still need GroupShield as your SMTP box WILL NOT scan any mails intended for INTERNAL MAILBOXES. GroupShield will be able to scan this. VirusScan 7 WILL NOT SCAN the .NSF file contents, just file-level scanning is applied.
